Happy Monday darlings! I have today off so it is indeed a happy Monday for me ;)

Today I had the açai antioxidant bowl from milk & honey, a super indie cafe in Costa Mesa. They’re so indie that they don’t even have a website- they have a tumblr instead.

I’ve had this beauty before but it was SO beautiful today that I had to take pictures of it.

Baked Pumpkin Spice Oatmeal

A quick & easy, warm and comforting oatmeal casserole packed with pumpkin and all of the flavors of autumn. Sweetened with brown sugar, this is sure to start your day off right.

020Hello lovelies! It’s been far too long since I shared a recipe with you. Life has been busy lately and everything seemed to catch up with me at once. I made this on a whim today after craving something pumpkin-flavored and warm.

I’ve been going through an intense pumpkin craze recently. It’s mostly involved varieties of pumpkin oatmeal and smoothies. I haven’t ventured into the realm of pumpkin pancakes, pumpkin waffles, pumpkin muffins, pumpkin bread, pumpkin blondies or pumpkin cookies because all of that stuff is just too darn addicting to have lying around. But this is pretty addicting too ;) …..

004You’re going to love this because it takes mere minutes to throw together, is a sure crowd pleaser and makes enough to last you a whole week! It’s got hints of cinnamon, nutmeg and ground cloves to spice it up and is definitely bursting with pumpkin.

If baked for 45 minutes, the texture is more solid and bar-like and if baked for my personal preference of 35-40 minutes, the texture is moist and smooth.

It’s pleasantly sweet from the brown sugar, but not so sweet that it overpowers the pumpkin. If you’re a pumpkin-lover like me, this is for you and if you’re not that big of a fan, you’ll probably love it too because this doesn’t just taste and smell like pumpkin, but fall in general ;)

011This is insanely easy to whip up in the morning and the best part is, it can last a family of four 3 days if each person eats a serving every day :)

Translated, this means less work and worry for you.

And if you don’t have a family of four, feel free to eat it all by yourself because that’s what I’m probably gonna end up doing. Today I had some for lunch, dinner and a snack. That’s how delectable it is.

013Take notice of those beautiful dried figs in the photo. Yes, those are my new obsession. They’re incredibly delicious and they have such a pleasing texture. Needless to say, I’m addicted ;) . They’re great snacks by themselves or topped with almond butter, and they’re amazing on oatmeal.

As a side note, this recipe is only 171 calories per serving, so it’s perfect if you’re watching your weight but still want to indulge in a fall treat ;)

016Note that if you choose to add raisins or mini chocolate chips, toss them in about 2 tbsp of flour before adding them in so that they don’t sink to the bottom.

I forgot this necessary step when I made the oatmeal this morning and I was sad because all of my raisins had fallen to the bottom :( .

019This oatmeal is perfect for when you’re in a rush because you can just pop a square in a bag or container and bring it to go.

And even better, it can be eaten anytime of day. You can savor it with maple syrup at breakfast, with almond butter at lunch, with a sweet potato for dinner and with dark chocolate for dessert ;) .

038Top with almond butter, maple syrup, figs, graham cracker crumbs, raisins, mini chocolate chips, brown sugar, cinnamon, applesauce, raspberries, Greek yogurt or whatever you desire.

You could also enjoy this with extra almond milk ;)

Baked Pumpkin Spice Oatmeal
Serves 12
A quick and heartwarming autumny oatmeal casserole packed with pumpkin and spices.

  1. 3 cups regular rolled oats (I used Quaker)
  2. 1/2 cup dark brown sugar
  3. 2 tbsp chia seeds
  4. 1.5 tsp baking powder
  5. 1 tsp pumpkin pie spice
  6. 1/2 tsp cinnamon
  7. 1/4 tsp nutmeg
  8. 1/4 tsp cloves
  9. 3 cups unsweetened almond milk
  10. 2 large eggs
  11. 1.5 cups pumpkin puree
  12. *1/2 cup raisins or mini chocolate chips + 2 tbsp all-purpose flour for tossing
  1. 1. Preheat oven to 350. In a large bowl, combine oats, brown sugar, chia seeds, baking powder, and spices.
  2. 2. In another large bowl, add the almond milk and eggs, stirring to combine. Add the pumpkin and stir to combine.
  3. 3. Add the dry ingredients to the wet ingredients, and stir to combine. Batter will be watery and thin. Do not worry, the oats will expand, absorbing the extra liquid.
  4. 4. If desired, toss either 1/2 cup raisins or 1/2 cup mini chocolate chips (or both!) in 2 tbsp all-purpose flour and add to the batter, stirring to combine.
  5. 5. Spray a 12 by 8 by 2 pan with cooking spray and pour in the batter. Other pan sizes will work but baking times may vary.
  6. 6. Bake for 35-45 minutes, depending on desired consistency. The longer the baking time, the more firm and bar-like the oatmeal will become. For moist, classic oatmeal texture, bake for 35 minutes.
  7. 7. Remove from oven and let cool for 10 minutes before serving.
  8. 8. Enjoy!

Seriously Good Vibes

Um hi. I’d like to start off by saying: whoever you are, no matter if we’ve never met face to face, if you’ve never heard of me, if you’re a major part of my life, or if you’re one of my best friends, I love you. Yes, you. I know it’s difficult to believe but I love you so insanely much it’s crazy. I may not have ever even spoken to you but I see the beauty of you and you are an integral part of this earth. And just today alone, someone thought of you and that thought made them smile. I love you. But more importantly, God loves you. And you are His precious creation.

So I basically just had the best day ever. I don’t know why it was today. It seemed like an ordinary day at first but for some reason, I saw the face of Christ in everyone I encountered way more than usual (which is still a lot). It was one of those perfect days where everything just fell into place and it was beautiful.

And before you stop reading because you think I’m bragging about how great my life is, I’m not. Please read on because there’s actually a bigger purpose to me sharing this with you.

So I’ve compiled a list of moments throughout my day when I felt unusually blessed and these are just a few. I’m not sure how major or minor these circumstances may seem to you, but to me, today, they meant the world.

So in 0 period today, I just felt like people were really going out of their way to be kind to me which was wicked awesome :) One person told me that my joy was contagious and marveled at how happy I always am. She said that she couldn’t help but be happy around me. Another encouraged me to present our group’s portion of the assignment we were working on and she told me that when I present things, I explain it really well and I’m good at speaking in front of the class.

In my next class, French, everyone read the love letters they had written to an anonymous/imaginary person, in front of the whole class. Although most of them were written to some nonexistent being, I felt as if I absorbed the love that was conveyed through each of these touching and heartfelt dedications. It was quite odd actually but with each letter, my joy, love and peace increased tenfold. I was so happy to see how much love there really is in the world.

After French, I had an awful free response math test, which I’m almost certain I bombed. But you know what, I’m laughing about it because it won’t mean anything to me in 10 years.

Following the dreaded math test was religion class. I always enjoy religion because it’s easy and I feel like I have an evident purpose to being there but today was better. A girl who sits behind me asked me to read and edit an article she had written for the school newspaper. May not seem like a huge deal but I was touched that she valued my opinion.

After lunch was English. Another favorite class because writing is my passion and I love reading as well. But I honestly enjoyed this English class more and during it, my teacher was in a good mood and made a few jokes that honestly cracked me up.

All day I was in a giggly mood but then in Journalism, I died of laughter. I wasn’t going to use names on this but Alex, THE short story absolutely made my life ;) I love our talks about J.

Car ride home was fun. Carpool and I bonded over our inability to make decisions and homecoming dress problems.

I had no homework tonight so I baked about 3 dozen pumpkin spice cookies, 3 dozen cookie cups with peanut butter cups inside and a tray of pb & j blondies. I ate my weight in raw dough and then regretted it. And then I ate some more.

I went on a nature walk with my younger brother and we had some great laughs and we established “our spot” by the lake. Not to mention, we were joyously greeted by some people we know that we never would’ve expected to see.

And then the best part was being showered by a flurry of the most honest, sincere and beautiful texts I have ever received. People told me I inspired them, basically the best compliment ever.

I am shocked when people tell me that I have a faculty for words and I know the right things to say because to be honest, I feel like I never say the right thing. The Holy Spirit works through me all the time and puts the words in my mouth. It’s pretty incredible.

Today you told me I was immensely joyful and asked me: “how are you always so happy?” The answer is simple: God does an incredible job working in my life and I am unbelievably blessed with joy. I choose to be positive and I choose to use it. YOU are in charge of your own happiness.

Life is insane. It passes in the blink of an eye and I know we all just want to freeze the moment. We fail tests. We mess up. We lose people. We get hurt. We fall down but it’s your choice to get back up. Don’t let anyone stop you- especially yourself. You deserve joy, you beautiful, marvelous person you.

My motto is “I’m not joyful because my life is perfect, I’m joyful because I’m alive.”

Life is a gift. You only get one. Don’t waste it being fake, pretending it’s all ok when everyone’s a little bit broken, doing things you don’t even love or living to impress others. It’ll get better.

Love God and live your life.

Apologies for the juvenile language and ranting. This is as real as it gets. I hope you took something from it. If you haven’t had a day like I had today in a while, I promise it’s coming. It’s all in God’s timing. He answers every prayer you pray.

Wednesday was also a good day too ;)

It’s funny how we ask “how are you?” to random people in the street. Do we even care? Do we hear their responses? Likely not, yet we ask every time. And when we are asked, “how are you?,” we respond robotically: “good,” as if we were pre-programmed to say that. There is no emotion in “good.” No one is ever good, each person has a struggle but why do we not admit to that? Why do we answer honestly and confess that we are “overwhelmed,” “a little tired” or “going through a tough time”? Why not? The world would be so much more real.

Maybe that one person in the street is the only one who would actually understand.

But truthfully, people want to be positive. They want to pretend that they’re doing fine and their lives are perfect because it lets them avoid facing the reality that we’re all broken people.

Yes it’s easier to pretend, but is it better?

Oh how I’ve missed blogging! What has it been? 3 weeks away from this marvelous corner of the world has been tough. I’ve been so busy and overwhelmed with school that I’ve neglected to keep up with one of the things that I love the most.

Since I’ll have to get back into the flow of blogging, I figured I’d update the few readers I have left with a few little snapshots of my life lately. Although I haven’t been blogging lately, I have continued to take pictures with my trusty Nikon ;)

034Tick tock…where does the time go? That’s what I’ve been wondering. Last night I had a little photo shoot with a couple classic (sort of) pieces. The watch is mine, the pearls were my Grandmother’s and the beautiful pearl hair pin was my Great Aunt’s. The delicate beaded handbag that the 3 pieces are resting on was also my Grandmother’s- she used it at her wedding. Anyways…that’s what I did with my Saturday night.

Kidding….I’m not really one for crayons and paints. I prefer photography 100%. After all, if anything goes wrong, I can just blame it on the camera ;)

003I have a thing for candles. There’s something about looking into the flame and just watching it dance back and forth, back and forth that calms my mind and relaxes my soul.

273Nothing beats a California sunset. Excuse the ugly fence in the way…..But look at those gorgeous colors. A sunset certainly brightens up a bad day :)

032And I can’t wait for when I can actually wear these….#sweaterweather? lol….It’s been upwards of 100 degrees here in SoCal and I’d do anything for a little rain.

012This, my friends, is the culprit. Yea um I have a thing for nut butters- like an obsession. I’m talking a jar a week. I usually have 10 jars in my pantry at one time. My favorite way to eat nut butters is with a spoon. And my fat jeans. And once I discovered I could make my own in a food processor, let’s just say I went crazy ;)

Food I’m Digging Lately #2

It’s finally Friday. OMG. These past few days have gone by sooooo slow. Longest week ever! Anyone else feel that way? Yea I thought so. ;) Long for me mostly because I started school this week and I’ve been having to wake up at 5:30 and go to bed earlier (whoops! haven’t been too great at doing that). Anyways, I am so psyched that it’s the weekend so of course I had to share some of the things that have gotten me through the week as well as things that I could not live without in general.

  1. Coconut Oil

001Ever since I read about coconut oil on Purely Twins, I have used it a bazillion times. I’ve made oatmeal with it, used it as a substitute for vegetable oil in pancakes, put it in smoothies, baked muffins with it and basically put it in all of my breakfasts. It’s incredibly versatile and is an awesome texturizer for whatever you choose to add it to. Not to mention it’s packed with healthy fats, which are necessary to survival. Healthy fats help to maintain organ (especially brain) health and they protect your bones and muscles! Plus, they keep you satisfied so you won’t be snacking as much ;)

     2. Hot/Cold Water with Lemon, Cinnamon & Ginger

014So plain water is just boring right? I’m not the only one….I drink water and lots of it but I just get bored to death drinking it. I need flavor. I’ve been regularly adding fresh lemon juice, cinnamon and ginger to my water for about a month now but when I heard that drinking it hot aids in weight loss, I began to down it even faster ;) So now I start every morning off with a cup of hot lemon water, sometimes with cinnamon and ginger and sometimes not. Either way, it tastes awesome and it helps you shed a few stubborn pounds! What’s not to love?

     3. Nut Butters

006You can never have enough nut butters. With 9 nut butters and counting, I guess you could say I’m a wee bit of an addict ;) I LOVE NUT BUTTERS. The best way to eat them is with a spoon, straight out of the jar. Beautiful. My favorites are Justin’s Nut Butters as they are nothing shy of perfect and have no hydrogenated oils! Yay! You may notice the Skippy and Jif in the photo. Yea I don’t eat those…..hydrogenated oils are bad people! Bad I tell you! Avoid them if you can :)

      4. Avocado

020Avo is my babe forever and always <3. No matter what else I eat in any given day, avocado is consumed at some point. My favorite way to eat it is in a mixture often with lentils, quinoa, feta cheese and any sorts of leftovers. See how I’ve enjoyed it here :) I love how it keeps me full and it’s soooo creamy.

     5. Oatmeal

001How obvious is my love for oatmeal. The other day I had it for not only breakfast, but dinner too! There are so many different flavor combos and ways to make oats that I never get bored! ;) Check out some of my favorite recipes here, here, here and here. Enjoy!

 1. What’s your favorite meal of the day — breakfast, lunch or dinner?

Clearly, it’s breakfast. I AM OBSESSED WITH BREAKFAST. I mean c’mon…You’re fresh out of bed, well rested, there are unlimited options, you have the most time and I just like it okay ;) . My favorite thing to have for breakfast is definitely overnight oats. They’re perfect because you make them the night before and there’s absolutely NOTHING that you need to do in the morning.

2. What’s your favorite fruit?

This is such a toughie. I love fruit and I will eat any and all fruits. I’ve yet to find a fruit I didn’t enjoy. I like mango, strawberries, blueberries, blackberries, raspberries, peaches, nectarines, pears, apples, bananas, kiwis, oranges, lemons, limes, grapefruit, plums, cherries, grapes, pomegranate…and the list goes on :) But if I absolutely HAD to pick one, I would go with strawberries. They’re super sweet, fun to eat and I’ve liked them ever since I was little. They’re classic.

3. When you were five, what did you want to be when you grew up?

Well, typical of a 5 year old girl, I wanted to be like my Mom :) And my Mom is pretty great so how could I not want to be like her? The logical child I was, I never wanted to be a princess or a fairy. I figured I would be a Mom as well. I also wanted to be a teacher. After I realized how terribly awful school is, I got over that wish and moved on to other things.

4. What quality do you find most attractive in others?

WOW. I could go on and on. I’m gonna cheat and pick two ;) First and most important, faith in God- a devotion to Jesus. God is at the center of my life so when I meet other people that aren’t ashamed of their faith, I instantly fall in love with them (no really…I do- I get googly eyed ;) ). With God as your stronghold, you will never be alone and you will always be safe. The second quality I find extremely attractive is sacrificial love. I’m talkin’ serious, undying love far beyond belief. It is very rare and that makes it a precious gift. It’s so attractive when people are willing to do anything for the good of another person without considering the consequences. That my friends is true love <3. Man, I love love.

5. What’s your favorite sport?

To watch? Hockey, because it’s interesting and the game never stops. There’s just tons of action. To play? I’m not a big fan of contact sports and I like to be alone and do things independently so I would have to say it’s a tie between swimming and running. They’re equally incredible and doing them makes me feel like I can conquer the world.

6. Gold or silver?

Silver. I like to think of myself as a simple girl and gold is way too ornate and lavish for me. It’s heavy. I like silver because it matches everything and it’s not too overdone. Although I recently bought this infinity ring that’s gold and I love it! ;)

7. What’s your favorite candy?

Does dark chocolate count? Lol ;) I LOVE DARK CHOCOLATE! If I had to pick a brand though, I would go with Almond Joy. Coconut is the bomb and when paired with chocolate and almond, it’s even better. I eat around the almond and then save it for last :)

8. What’s your favorite online shopping website?

I’m not good at choosing these types of things….I love online shopping. No glaring dressing room lights, no walking around for endless hours at a mall and no feeling under-endowed in a swimsuit ;) Believe me, I know. For clothes I love Nordstrom, Urban Outfitters and Saboskirt and for odds and ends I go on Etsy or Anthropologie.

9. What’s your pet peeve?

I have many. But I hate when people have all of these facades and they have a different personality depending upon who they’re with. Superficiality is very annoying.

10. Winter, spring, summer or fall?

They’re all great for different reasons. But I love Christmas SO MUCH and I get nostalgic just thinking about it. I love the cooler weather, the family time and the Christmas songs so I would have to go with winter. But fall is fun too because of the crisp feeling in the air and the smells of fire and I love summer because of the time off ;)

11. How many pairs of shoes do you have?

22. Is that a lot? I don’t think so…..I love shoes!!! But what don’t I love. I feel like I’ve said “I love…” in all of these questions ;) Heels are the most fun because the patterns and styles are so cute and they make you look taller and thinner. What’s not to love? Besides the blisters and pain that is….I also love sneakers! Having a great pair of sneakers to workout in that happen to be bright and colorful at the same time just makes for a better workout.

WIAW #1 (Sort of….)

Happy Hump Day lovelies! We’re on the homestretch for the weekend…..YIPPEE! Are you excited? I know that I am :)

Peas and Crayons

Welcome to my first WIAW. Thanks to Jenn @ Peas and Crayons for hosting the link-up! I’m finally hopping on the whole WIAW train here. I can’t believe I’ve never officially done a WIAW besides the recap of my eats post juice cleanse here. I usually do photograph my food intake every day, but for some reason I’ve never done WIAW.

Today was the first day of school so from now on, I will be switching to mostly afternoon posts as opposed to morning posts. For your convenience please subscribe to my blog so that you don’t miss a post! ;)


005This actually wasn’t the breakfast I had this morning….These are Lovely Lemony Oats which I’m still developing further for a recipe but the key ingredients are fresh lemon juice and lemon zest and clearly a TON of cinnamon. I LOVE CINNAMON. I put it in everything from water to smoothies to oatmeal. It’s great. What I actually had this morning consisted of my typical morning bowl of fruit and some leftover pancakes from yesterday. They were delish. Definitely check that recipe out ;)

At breakfast I’ve also been having boiled water with lemon juice because it aids in weight loss and it tastes great to boot! I think it’s something with the boiling water that activates a compound in the lemon juice….I’ll have to do more research on that. But comment if you know!


007Perhaps the easiest thing to do for lunch is to make a mixture. My Mom was the one who originally inspired me to make these mixtures and they’re very simple. It’s not so much a salad as it is a jumble of random foods and leftovers that you have on hand. I’ve tried many different combinations in the past but this one is: sauteed broccoli with garlic, whole wheat linguine with pesto, pre-cooked lentils from Trader Joe’s and 1/4 avocado mashed :) . It was creamy, high protein (with the benefit of healthy fats) and very satisfying.

I also had a ripe and juicy nectarine which is not pictured.


013I’m a sucker for easy and delicious snacks. When I’m hungry, I’m hungry and I’m not going to spend 20 minutes prepping a snack that will only take me 5 to eat. These are fresh cut carrot sticks with Sabra Roasted Pine Nut Hummus :) If you’ve never tried this hummus, you should do yourself a favor and grab some next time you see it because it is amazing! So savory….WOW.


014Go ahead and gasp….Yes! It’s actually chicken. I am back to eating chicken and turkey- not every day but some days. I found that I was a little bit nutrient deficient and was going through wacky mood swings as well as getting easily fatigued when I didn’t have meat so I’m experimenting with it again- at least for now. I’m still eating a highly plant based diet as well as making a lot of vegan recipes, but the meat is staying put. So this is grilled chicken, green beans and Trader Joe’s 7 Grain Pilaf (which is awesome!). It’s made in the microwave, only takes 2 minutes and is packed with major flavor and a little kick (it’s mildly spicy). It was truly love at first bite ;)

Blueberry Detox Green Smoothie

A healthy thick and creamy detox smoothie that’s sweet & simple, perfect for anytime of day and packs in a few of them green veggies ;) Yum!

136Happy Monday ya’ll! So if you read this and this, you’ve probably figured out that I’m trying to cut back a little bit and hopefully shed a few of them pounds- or at least feel better about what I’m eating. So what better way to do that then with a refreshingly clean and delicious detox smoothie?

I’m mildly obsessed with smoothies. They’re super quick, easy, filling and tasty ;) I wanted to pack in a few extra greens in this one but I didn’t wanna be able to taste ‘em. So naturally I picked spinach and avocado, 2 of the mildest tasting green veggies on the planet. You can add spinach or avo to nearly anything! I’ve added avo to muffins, cookies, breads, salads and of course smoothies!

137This smoothie is incredibly creamy in texture, due to the healthy fats and oils from the avocado and it tastes sweet from the banana. I’ve already had it for breakfast, lunch and dinner and you can easily make it in bulk for your entire family if you don’t want to cook ;)

Smoothies give the illusion of a drink and sometimes seem unsatisfying, as if you’d be hungry an hour later. Not with this one! This smoothie has incredible staying power as it’s packed with protein from the oats and healthy fat from the avocado! The last time I had it for dinner, it was so satisfying that I didn’t even want dessert.

142You’re going to love this smoothie because it keeps you full, it’s packed with green veggies yet still sweet, and you can drink it guilt-free. Not to mention the marvelous blueberry flavor wonderfully camouflages any hint of the greens!

This smoothie rests at 400 calories so it’s definitely a meal smoothie and a good one at that. It’s far less calories than your typical dinner for sure and it makes a perfect breakfast. Plus, you’ll feel great about it because all of the fats from the avocado are only healthy fats ;) Eat (or drink) your healthy fats!

  1. 1 cup unsweetened almond milk
  2. 1 cup organic spinach
  3. 1 small frozen banana
  4. 1/2 cup rolled oats
  5. 1/2 cup blueberries
  6. 1/4 small avocado
  7. 1 tbsp hemp hearts (or seeds)
  8. 1 tsp cinnamon
  9. Splash of lemon juice
  10. Handful of ice, if desired

Averie’s Soft and Chewy Seven Layer Magic Bar Cookies

On a not so pleasant note, I’ve gained some weight- I’m about 7 pounds up from my ideal weight of 113 lbs (I’m 5’4). I’m struggling to find balance, as I posted about yesterday, by taking these steps:

  1. Limiting or omitting desserts for one week and then limiting them after that.
  2. Eating more protein to fill me up and speed up my metabolism.
  3. Drinking more water- especially ice water with lemon, ginger and cinnamon.
  4. Snacking on fruits and veggies.
  5. Eating only to nourish myself and not for pleasure or because I’m bored.
  6. Savoring my food.
  7. Getting more sleep- a toughie, but absolutely necessary.
